PEPPER-CRUSTED GRILLED FLANK STEAK

2 large sweet potatoes (peeled and chopped)

1 flank steak (1.25 lbs)

2 tsp extra-virgin olive oil

1/2 cup light mayo

1 cup packed fresh baby spinach leaves

1 tsp dijon mustard

1/2 tsp garlic powder

Preheat oven to 400. Coat large baking sheet with cooking spray. Mist chopped sweet potatoes with spray, season to taste with salt and black pepper. Bake 25-30 min until tender and golden brown.

Set a grill pan over medium-high heat. Brush both sides of steak with oil and season to taste with salt and pepper. Add steak to pan; cook 5 min per side for medium. Let stand 10 min before slicing crosswise into 1/4 in thick slices.

In food processor or blender, combine mayo, spinach, mustard and garlic powder. Process till smooth.

Serve steak slices with spinach mayo and potatoes.
